• Double Chocolate Chip Banana Quinoa Muffins! •


As you may have seen if you follow me on Instagram I made these beautiful delicious totally not healthy for you muffins. Don't be fooled by the quinoa! However, they are vegan! Every time we cook quinoa for dinner all I can think of is chocolate chip muffins because I originally started making non-vegan muffins back in 2012 or 2013 from the Quinoa 365 cook book. It's both a blessing & a curse?

My spouse brought some of the muffins to work a couple of weeks ago and they were a hit with the non-vegans. They couldn't believe it! So if you're completely against not having animal product in your baked goods.. Don't worry you won't even tell the difference. I promise. If you can, please leave a nasty comment below! LOL I promise I will not delete as I would have deserved it for promising you something & it not turning out as planned.

These Chocolate Banana Quinoa Muffins can even be a breakfast muffin! You probably think I'm crazy but honestly, all the goodness inside is probably better for you than the sugary cereals on the market!
 

Directions:

Preheat the oven to 350 degrees Fahrenheit. Lightly spray a muffin pan with baking spray
(I used coconut oil spray).

In a medium bowl, whisk together flour, cocoa powder, brown & granulated sugars, baking powder, baking soda, and salt. Stir in quinoa and chocolate chips. In a separate mixer bowl, mix mashed banana & flaxseed eggs until well blended. 
Mix the banana & egg mixture into the dry mixture. Using a standard sized ice cream scoop, distribute the batter into the greased muffin pan. Place in oven and bake for about 18 - 20 minutes, or until a toothpick inserted into the muffins comes out clean.

Twenty Five Weeks




Oh 25 weeks, you have been a rollercoaster! I've been dealing with pregnancy carpal tunnel in my hands, calf cramping, anxiety & just overall being uncomfortable. This week is full of being uncomfortable BUT I know it's only going to get worse & I should find ways to deal with it. I think this week I am a little on edge as well.. I can complain & hear constantly "Just you wait"... Can I politely say SHUT UP!! Nothing is more irritating than hearing those three words, or another thing is "You're getting big!" .. Yes, I am aware. I have a growing boy in my uterus that is pushing up my organs. I totally understand why people say, pregnant woman, when mad are scary LOL Just my inner thoughts typing them out aren't very nice.. hahah sorry! 
I had my maternity appointment on Monday and it went well, I went over the points I wanted to with my doctor and some concerns. After my appointment, my health anxiety decided to flare. It was an all day flare & awful. I felt sick to my stomach and had to force myself to eat or even feel like being productive. I went & did a couple of tests, booked my sugar challenge & got the call for my ultrasound that is set up for today. I've been leaking colostrum for a couple of weeks now but noticed last week it had a little blood tinge to it. Which is concerning. I, of course, have looked up causes and a couple of things could be happening but we want to rule out the worst of course. The big C word since it runs strongly on my mother's side of the family. Her mother had it, her sister Evelyn has it and my mother fought it too. My auntie Kathy is the only one who had been lucky not to have it. So I am sure you can understand why my health anxiety decided to go off the charts. The other day... As in yesterday,  I woke up not wanting to get out of bed. Not wanting to go to work or do anything productive. Instead, I got myself up, made my smoothie, booked myself a manicure & thought to myself screw that! I've been in a small funk since Monday because of testing I need done as a precaution since breast cancer runs strongly on my mum's side of the family & it has given me anxiety, sadness & just over all feeling like I was going to go into a depression. I cried that morning over it because it really scares me!! I have a right to be scared but I will not let it take over my life or the rest of my week. I know exactly how it feels to fall into depression so if I ever get into a small funk like that again I'll be watching myself carefully. One thing I take a lot of the many things I take a lot of pride in is being aware of my emotions & speaking up to the right people to support me in the tough time. I know it's not easy for many so that is why I feel really good when I can ask for additional emotional support.

This weeks Mantra:
I am healthy,
I am greatful,
I am abundant,
I'm growing stronger mentally, spirituality, + physically everyday (seriously LOL)

Otherwise, I my diet has been phenomenal I'd say! With the except of a vegan cupcake or chocolate cake over the weekend. Heheh, I pulled the pregnant card on those treats & didn't feel bad what so ever! I have fresh veggies every day, I hit my protein intake & get all my vitamins. I've been a rockstar! I need a pat on the back. I do however, have one craving. PASTA yum yum yum and do need to drink more fluids per request of my doctor since I am having braxton hicks. I've already noticed a difference upping my water intake to 100oz a day.
my favourite smoothie for the last couple of weeks has been my Beet smoothie!
Nothing beets a good smoothie ;) See what I did there! I first tried a beet smoothie from Jugo Juice & didn't want to spend $12 on a smoothie every day so I make mine at home just the same way Jugo Juice would.

- 2 cooked beets

- 1 medium banana
- 1 cup of blueberries
- 1 cup of strawberries
 - 3 tbsp hemp hearts
- 1 cups of apple juice





I'm hoping week 26 will be better with the adjustments I will be doing. I have to start taking it easy & not being so hard on myself when I feel useless. It is SUPER hard for me to come to terms with it like I have said in previous posts.. It almost puts me in a sad mood for some time which really really sucks. I just feel like so many women out there who are pregnant are still thriving at this time during pregnancy & not having to slow down. I just feel like it's wrong of me but I am being recommended to take it easier. I hate being told to slow down & take it easy.. It really bothers me but I must try.

Twenty Four Weeks

About babe: 

Babe is growing steadily, having gained about 4 ounces since last week. That puts him at about 1 1/3 pounds. Since he's almost a foot long (about the length of corn), he cuts a pretty lean figure at this point, but his body is filling out proportionally and he'll soon start to plump up. His brain is also growing quickly now, and his taste buds are continuing to develop. His lungs are developing "branches" of the respiratory "tree" as well as cells that produce surfactant, a substance that will help his air sacs inflate once he hits the outside world. His skin is still thin and translucent, but that will start to change soon.

Now on to me! I've been feeling okay lately, I can definitely tell the hot weather has me feeling a bit more nauseous than normal. I also have officially felt babe kick me in the ribs! I guess that makes sense since my uterus has now risen above my belly button and is now the size of a soccer ball! 
I haven't had cravings this week but I have noticed eating smaller portions is a must. I can no longer eat big meals and have to have several through out the day. I have started to get acid reflux again & hormonal break outs! As if I needed to get a breakout & feel crummy when I am getting bigger and feeling like a seal sometimes... I decided to purchase a couple new items to help my insecurity of my 20-pound weight gain... I bought two new blouses to act as cardigans because I dislike my arms & just the luv handles.. As someone who has never been this heavy before.. EVEN THOUGH I am carrying my child.. It's still hard to feel cute & confident. I, however, did notice dressing in cute dresses & outfits really does help my confidence. I know others won't say anything because I have an "excuse" or a golden ticket since I am 6 months pregnant... I just personally don't feel flattering unless I put on a cut outfit. I've noticed the weight gain in my face & that is a big insecurity of mine. Sometimes I just want to cry! I am just being completely transparent.

Spencer has been absolutely amazing & saying such nice things when I feel down. I told him how I felt briefly and he said "you're beautiful, even more beautiful carrying my son." HOW DID I GET SO LUCKY. 



 He went on to say how attracted he is to me and if anything it's amplified.. I died a little inside because my heart was melting at this point!
We discussed names as well since we share a "notes" on our iphones.. I have a list of 17 names and we have a middle name picked out but the first name is a nay for all 17 as none stick out to Spen. I want something that Spencer will like just as much as I do.. So we still have acouple of months to think of names for our baby boy!

I have a maternity appointment coming up on Monday where I will get all my lab requisitions to do more blood work & also to do the glucose challenge test. I should not have any issue with that test since I have been watching my sugar intake! After this maternity appointment I'm officially seeing my doctor every 2 weeks instead of every 4 and seeing her until I'am 36 weeks pregnant then I will be seeing her every week until I deliver! Eeee! Getting a little anxious!
I also have to mention baby brain is real. It's not a myth and it has started to get really bad this week for me... It's a little discouraging BUT I know it's only temporary.

• Coconut Milk Chocolate Mousse! •




I experienced vegan chocolate mousse on Friday & since then I've been craving it again! It was so good, you can't even taste the coconut milk! Perfect substitute for the dairy version.

With a smooth, airy, mouth-coating texture, delicate sweetness, wonderfully balanced combination of flavours & long-lasting aftertaste, this is a rich, sensual treat that you will wish to enjoy all alone.

The magic doesn't stop here though, you can easily add your personal touch to this easy chocolate mousse. A few ideas include: more cocoa for those dark chocolate fans, a pinch of cinnamon and/or cayenne for a Mexican twist, a few drops of peppermint extract or fresh mint for a refreshing taste, finely chopped pineapple for a full-on tropical flavour (or combined with rum, for a daring chocolate piña colada mousse if you're not pregnant like me!), orange zest or extract for a little tang, chocolate chips or chopped nuts for crunch, coffee, Kahlúa, raspberries, or anything else that takes your fancy. This recipe is versatile and exciting variations can easily be made.

The Coconut milk into the fridge over night so that the heavy cream can separate from the coconut milk, It will float to the top of the can and solidify over night making it easy for you to open & scoop out! Also another great tip would be to put your metal mixing bowl & hand mixer parts in the fridge to become cold as well so it doesn't warm up the cream. 

Ingredients:


+ 2 cans of Thai Kitchen Coconut Milk (NOT the lite version)
+ 1 Teaspoon of Vanilla Extract
+ 4 Table Spoons of Cocoa Powder
+ Pinch of salt
+ Powdered Sugar for sweetening to taste OR Dates, Stevia etc

Directions:

  1. Scoop the coconut cream into a bowl. Do not use the liquid at the bottom of the can! 
  2. Add the cocoa/cacao, salt, vanilla and whisk while adding the sweetener of your choice (Mine was powdered sugar).
  3. Wisk for 1 min with an electric whisk or 2-3 mins with a manual whisk until it starts to thicken a bit. Scrape the sides half way through to ensure everything gets combined.
  4. It will still be pourable, but will set in the fridge. 
  5. Pour into your serving dishes and place in the fridge for at least two hours.
  6. The mousse will last a few days in the fridge.

Twenty Three Weeks



Baby is the size of a Papaya! 11.4 inches from head to foot and weighs 1.25 pounds. Officially hitting the 6 months of being pregnant. I defiantly now feel it! The backaches are now in full effect and getting out of bed isn't as easy as it use to be. Sadly acid reflux has returned & TMI boob leakage is happening. Hahaha, the lovely times of pregnancy! I really can't complain though. I have had an awesome pregnancy so far & have had the best support/helpful other half I could ask for. He even said he would clean the tub for me! Which normally I take care of the washroom on the cleaning list.

By the end of my 23 weeks I started to feel a bit off & sluggish. I didn't think much of it but then Wednesday rolled around & I was having bad cramping when I was at work.. I do what every other pregnant woman would do and turn to mom groups & forums on pregnancy sites. Looking up " Cramping 24 weeks, feels like period cramps." I got a mix of answers so I called my maternity doctor and let her know my symptoms the last couple of days and how I've been feeling. She said I should head to the hospital to be assessed, but before we made any solid plan she put me on hold for a couple of minutes and we both decided I should just come into the office. So thats what I did!
I did a urine test as the main test before diving deeper. THANKFULLY that's all I had to do. Turned out I had a urinary tract infection and didn't even know it. I was prescribed antibiotics and told if my cramps do not go away by the next morning to hit up labour & delivery where I would be assessed and additional testing would be done for Step B. Normally doctors wouldn't talk to someone who is 24 weeks pregnant about Step B because it's not a concern/you're not tested until 37/38 weeks. IF someone is more prone to UTI's during pregnancy that would look at those women first. However, that being said this is my second within the whole pregnancy and no culture grew in my last test at the lab. My doctor is just really great for letting me be aware ahead of time.

Why do pregnant women get more UTI's?

UTI’s are more common during pregnancy because of changes in the urinary tract. The uterus sits directly on top of the bladder. As the uterus grows, its increased weight can block the drainage of urine from the bladder, causing an infection.


What is Strep B?
Group B streptococcus (GBS) is a type of bacterial infection that can be found in a pregnant woman’s vagina or rectum. This bacteria is normally found in the vagina and/or rectum of about 25% of all healthy, adult women. Women who test positive for GBS are said to be colonized. A mother can pass GBS to her baby during delivery. GBS can cause lung or brain infections in the baby. 


I felt like I was almost too productive on my weekend because when Monday hit.. I felt SO exhausted like I was hit by the sleep bus. I think I should really designate Sunday's just to being lazy bones but if I do that I feel kind of crappy! No winning I guess during pregnancy.
This week we got a new shelving unit for the close for a "unconventional dresser" idea. Thanks Pinterest! I can't wait to show you guys. 






I thought I would share what I ate this week because once I find a good routine I rarely steer away from it for the week. I have really been craving baked potato this week and PB & J sandwiches. Raspberry anything is still a craving too. I just can't get enough! I can no longer really eat burgers because they start acid reflux for me pretty badly. Im totally okay with switching it up. My spouse is a BBQ master and has the nickname "Flippy" for a reason. Here is what I ate this week below! Please note I have now adopted a vegan lifestyle newly this week. I have spoken to my doctor and we have covered all the basis of nutrition & what I should be taking as far as supplements go.

➾ 3 Quick Vegan Meal Ideas

1. 15 minute Creamy Avocado Pasta 


9 ingredients in 15 minutes! Get your blender ready to make this saucy up in here! Spencer & I have decided to adopt a vegan lifestyle after watching What The Health & also crying while watching Earthlings... Well, just me crying because the poor animals..  Anyways!  We went to our local farmers market, Root Cellar and picked up the essentials for this dinner. We wanted to make something relatively quick & easy. Nothing better than pasta! A nice twist was having the avocado & basil leave sauce. It was so creamy & delicious. I highly highly recommend trying this recipe out. It is from Oh She Glows

Ingredients:


  • 9 ounces (255 grams) uncooked pasta
  • 1 to 2 cloves garlic, to taste
  • 1/4 cup lightly packed fresh basil leaves, plus more for serving
  • 1 to 2 tablespoons fresh lemon juice, to taste
  • 1 tablespoon extra-virgin olive oil, plus more if needed
  • 1 ripe medium avocado, pitted
  • 1 tablespoon water
  • 1/4 to 1/2 teaspoon fine sea salt, to taste
  • Freshly ground black pepper, to taste
  • Lemon zest, for serving

Directions:

  1. Bring a large pot of salted water to a boil. Cook the pasta according to the instructions on the package. For a lighter option, serve the avocado sauce with zucchini noodles.
  2. While the pasta cooks, make the sauce: In a food processor, combine the garlic and basil and pulse to mince. Add the lemon juice, oil, avocado, and 1 tablespoon water and process until smooth, stopping to scrape down the bowl as needed. If the sauce is too thick, add a bit more oil. Season with salt and pepper to taste.
  3. Drain the pasta and place it back in the pot. Add all of the avocado sauce and stir until combined. You can gently rewarm the pasta if it has cooled slightly, or simply serve it at room temperature.
  4. Top with pepper, lemon zest, and fresh basil leaves, if desired.

    Tips:

  • Because avocados oxidize quickly after you slice them, this sauce is best served immediately.






2. Smoothie Prep!

Going from left to right 

1. Kale, cucumber & apple
2. Pineapple, mixed berried, spinach
3. Mixed berries, spinach
4. pineapple, mango, kale

Add Chia Seeds, vegan protein powder from BOB's Red Mill & last but not least hemp hearts! Throw in your blender, add some almond milk or water and put that baby on pulse! omnomnomnoms.






3. Love Bowl 

 Rice with steamed greens, mixed legumes & tahini-lemon sauce & half an avocado! 


Directions:

  1. 1 cup of rice to 2 cups of water in your rice cooker or pot. 
  2. Add a small amount of water into your steamer tray or steamer built in pot and steam your greens for no longer than 4-5 minutes. Drain the water and let the greens sit.
  3. Rinse and drain the legumes. Add to a medium pot and cover with a couple inches of water. Increase heat to high and bring to a boil and then immediately reduce the heat to medium and simmer, uncovered, for 15 to 20 minutes until tender. Drain well.
  4. Prepare your Tahini-Lemon sauce! 
    For the Lemon-Tahini Dressing:
    • 1 large garlic clove
    • 1/2 cup fresh lemon juice
    • 1/4 cup tahini
    • 3 to 4 tablespoons nutritional yeast, to taste
    • 3 to 4 tablespoons extra-virgin olive oil, to taste
    • 1/2 teaspoon fine sea salt
  5. Plate your legumes first then your greens and top with slices avocado & your delicious lemon-Tahini dressing.
